Meatloaf muffins

Want meatloaf but don’t have time to wait for it to cook? Cook individual portions in a muffin tin!

Any meatloaf recipe will work. I usually don’t follow a recipe, but this is how I made it tonight.

1lb ground beef
One onion
Salt
Pepper
Tabasco
Sharp cheddar cheese (about 1 loose cup shredded)
One day old bagel (or equivalent bread)
Milk
Ketchup
6 medium russet potatoes

Heat oven to 400f

Shred or crumble bread. Pour enough milk to moisten. Let sit while you do everything else.

Cut potatoes into wedges, toss with salt & pepper & some olive oil. Toss into 13×9 baking pan (I use Pyrex) & put on bottom shelf of oven.

Sautéed finely diced onion in 1tbsp oil until soft. Spoon into large mixing bowl.
Add ground beef. Salt, pepper, a few dashes of Tabasco, half if the cheese. Stir milk & bread until pasty and add to meat. Mix with fork. Spoon into greased muffin tins OR nonstick muffin tins. Top with a little cheese & ketchup.

Bake about 25 minutes or until brown on top & bubbly.

Serve 1-2 “muffins” per person.

This recipe made 8 muffins.
